The Forwarding Department was responsible for the transport of wooden casks of GUINNESS stout from the Brewery to customers by horse and dray and early motorised vehicles. The Forwarding Department purchased horses for the Brewery, purchased feed for the horses, managed the stables and the draymen. With the introduction of motorised delivery vehicles in the early 1900s, some of the draymen became lorry drivers, delivering casks of GUINNESS stout around Dublin city.

Vathouses were used to house vats which were holding vessels in which stored GUINNESS beer until it was ready for distribution to the trade. The earliest Vathouses at St. James’s Gate Brewery were known as Vathouse 1 and 2, built in the first phase of the Brewery extension in the 1790s, and are still standing today. Traditionally vats were very large cylindrical wooden vessels . By 1896 there were 150 vats at the St. James’s Gate Brewery. Foreign Extra Stout remained in the vathouses for the longest period, 18 months, before it was fully matured for distribution to trade.

The Cooperage Department was one of the largest departments in the St. James’s Gate Brewery. The Brewery employed c.300 highly skilled coopers, who made a thousand new wooden casks a week and repaired thousands more. Coopers were the most highly skilled tradesmen in the Brewery, and had to undergo a seven year apprenticeship to become a qualified cooper. The coopers in the Cooperage Department were supported by over 600 hundred labourers, who helped the coopers by preparing the wooden staves and stacking the finished casks into pyramids.

The Engineers’ Department was one of the largest departments in the St. James’s Gate Brewery. The Engineers’ Department was responsible for all building construction and maintenance as well as mechanical and electrical engineering projects in the Brewery. The Engineer’s Department supervised the construction of all Brewery buildings and brewing machinery. By the 1960s, there were over 1100 people employed in the Engineers’ Department, including skilled craftsmen such as boilermakers, patternmakers, carpenters, painters, scaffolders, bricklayers, plumbers, blacksmiths and coppersmiths as well as professionals such as architects and engineers.
